Tonight's dinner was this super simple Italian salad wrapped in a tomato-basil tortilla. This is great to make if you're trying to use up leftovers or need a light, quick meal. I dressed the salad with an Olive Garden Copykat recipe. You can add whatever you like!
shredded cheese (I used mozzarella)
Croutons (I made my own out of some leftover bread, brushed with butter and sprinkled with garlic powder, then broiled until crispy.)
Chop vegetables and mix salad ingredients together. Just before serving, add the dressing and toss to coat. Wrap in tortilla (optional).
