Oven Shrimp Fajita Quesadillas

Here is a really quick meal that you can put together in almost no time at all. I have a quesadilla maker, but I have started making my quesadillas in the oven and using whatever ingredients we have on hand at the time.

I cooked the shrimp, seasoned with a little bit of chili powder, cumin, minced garlic and onion powder. Then, I sauteed sliced bell peppers with onions. I cut a large tortilla in half, spread a spoonful of refried beans on one half, topped with vegetables and shrimp, some shredded mexican cheese over the top.
Next, fold the tortilla over to hold it together with a toothpick.

Bake in the oven for about 15 minutes at 400. I serve this with sour cream, chopped tomatoes and whatever hot sauce you like. I like to mix the hot sauce into the sour cream and dip the quesdadilla. Chopped hot peppers would be great in this, too, but I just don't feel like chopping hot peppers for a while :)

What a great filling for quesadiillas. I often see them in restaurant menus but never tried making them at home. Looks awesome as usual!
