Last night I started my second course of the Wilton classes. I really wasn't very excited about this class and the basketweave cake that will be made at the end. I was just taking it to stay in the sequence and continue on to fondant, which I am very excited about.
But, after class last night, I've changed my mind. I think Course 2 will be a lot of fun. It's even better that there were only 2 of us in class - my friend Dena, and me. We started off by quickly reviewing some of the things from course 1. Then, we practiced our shell border some more and moved on to rosettes and the reverse shell border. I love the rosettes - I can make them near perfect every time! I wish I had some photos to show you and make this post a little less boring.
After the shells, we practiced rosebuds. Again, pretty simple and cute. I can see myself using them on my cakes. The last flower we learned was a mum. We practiced them on the flower nail, but to put this flower on a cake, it needs to be made directly on the cake if it's from buttercream. I made a few funny looking mums, and then 1-2 really great looking ones.
Next week I am looking forward to learning how to use color flow and royal icing. I love that we'll be making the flowers ahead of time and using them on our final cake. Look for 2 updates next week. We're having our normal Monday evening class, and then an extra Wednesday class to make up for a missed Monday.
