Lunch Lady Bars


Why didn't any of my lunch ladies know about these? Was Patrick Henry just too small of a school that they were left out of the Lunch Lady Loop? I think the only loop my lunch ladies were a part of was the "fruit cup and milk" loop - that's all I remember getting. Ok, I do remember the occasional jello (with fruit in it) or pudding cup.

Thank goodness I read a lot of cooking blogs. I don't need those lunch ladies. I just need their cookie bars. I found these on Mrs.Lee's blog - YUM. These definitely fall in the YUM category.

I have never made cookies with oil instead of butter and let me just say that I was very impressed with how quickly the dough mixed together and how easy it was to smooth into the pan. And - using oil had an extra bonus - the bowl was practically clean as I emptied the dough into the pan! As a downside, that meant there was little cookie dough to scrape and eat from the bowl. They baked up in exactly 22 minutes. They could have gone a couple more minutes, but I like to underbake a little.

Ingredients:
2 1/2 c. Flour
1 t. soda
3/4 t. salt
1 c. oil
1 c. brown sugar
1/2 c. granulated sugar
2 eggs
1 t. vanilla
1 c. mini semi-sweet chocolate chips


Instructions:
Combine dry ingredients. Set aside.
In bowl mix together oil and sugars.
Add eggs one at a time.
Add vanilla.
Gradually add dry ingredients.
Mix in 3/4 c. of chocolate chips. (I used more like 1 cup of semi-sweet chips)
Spread into 9x13 pan.
Sprinkle remaining 1/4 c. chips on top. (I used about 1/2 cup)
Bake at 350 for 15-25 minutes or until light golden brown.

Gosh, these look good. I'm definitely going to have to give them another try. My batter/dough was so thick that my hand mixer would barely mix it. And they didn't turn out chewy at all. Yours look great though!
