Blueberry Sauce

Last night we went blueberry picking with our friends Chris and Stephanie. We picked for a couple of hours and now we are overloaded with blueberries. I'm talking 35 POUNDS of berries. I plan to freeze most of them and give some away, but also will be making a lot of blueberry recipes this week. This morning I made blueberry waffles with blueberry sauce. I got both recipes from allrecipes.com. This sauce is really good. I like that it doesn't have any sugar, and the orange juice makes it a little tart. It was delicious on the waffles and the leftovers will be great on top of ice cream.

1 1/2 cups blueberries
3 tablespoons honey
1/2 cup orange juice
1 tablespoon cornstarch

To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.
